Flavor and taste components of buckwheat are important quality factors which influence the price paid for buckwheat. The desired flavor or taste differs, depending on the end use product, as well as those required in traditional markets. Components that are responsible for flavor and taste in buckwheat are being identified and modified in self-pollinating lines. This is expected to be of benefit, both in traditional markets, as well as in new product development.
