Hull composition and thickness
Buckwheat hulls
Thicker hulls that resist breakage have been developed in cross pollinating buckwheat. However, thinner hulls allow for a increased flour recovery. As buckwheat hulls quickly absorb water, which aids in seed germination, thinner hulls with greater resistance to water uptake are being developed in self-pollinating lines. These will provide increased groat protection. The role of hull composition on fungal and bacterial contamination is also being studied.
