Starch functionality
Various buckwheat products require buckwheat with different starch functionalities.
Buckwheat flour is presently used in many different end use products and in many different countries. Many of these products have different requirements for starch functionality. The functionality of the starch, which will optimize its use in different products, is being researched, as well as how it is influenced by protein and other flour components. A range of starch functionalities are being developed in self-pollinating lines which will allow for increased quality in existing products, as well in the development of new products.
