Seed density
High seed density self-pollinating buckwheat.
Increased seed density allows for increased flour recovery as well as increased starch percentage of the flour. The higher density seeds are more plump but still retain a well developed flange that allows for ease of dehulling. As the embryo remains the same size in these seeds while the endosperm tissue increases there is an increase in the percentage of starch that the seeds contain. This is desirable in the Asian noodle market.
